Ingredients:
2 cups flour
2 tsp. baking soda
1/2 tsp. salt, if desired
1/2 cup raisins
1/2 cup coconut
3 large eggs
2 tsp. vanilla
1 1/4 cup sugar
2 cups grated carrots
2 tsp. cinnamon
1/2 cup chopped pecans
1 grated apple
1 cup vegetable oil
2 tsp. baking soda
1/2 tsp. salt, if desired
1/2 cup raisins

Preheat oven to 350 degrees. Mix all ingredients together.
Fill paper lined muffin tins 2/3 of the way full. Bake for 35 minutes. These freeze well.
I like to have these muffins for breakfast or a mid-morning snack. They are delicious and healthy!
